Ham Loaf

1 lb. ground pork and 1 lb. ground ham

2 eggs

1 cup saltine cracker crumbs

1/2 can tomatoes

Milk to moisten

Mix the pork and ham and shape into 2 individual loaves. In a saucepan, combine:

1 cup brown sugar

1 teaspoon dry mustard

1/3 cup vinegar

1/2 cup water

Not only great for the Holidays, this ham loaf has become a favorite birthday meal.

Preheat oven to 350°.

In a large bowl, beat the eggs; add milk, bread crumbs and pepper.

Add ham and pork; mix well. Transfer to a 9×5-in. loaf pan. Bake 30 minutes.

Meanwhile, combine glaze ingredients; spoon over loaf.

Bake until a thermometer inserted in loaf reads 145°, 40 minutes longer, basting occasionally with glaze.
